Description

The Take Series is a matched kitchen collection forged from a single specification and, so every blade you choose handles, balances, and cuts like part of one set. Each knife runs a stainless steel cutting core clad in suminagashi Damascus with a high-contrast finish, hardened for edge retention for a keen, long-holding edge. The Santos rosewood wa-handle is consistent across the lineup, giving a light, agile feel in hand whichever knives you build into your set. Choose the blades that match how you actually cook: the Gyuto as the workhorse for proteins, vegetables, and herbs; the Kiritsuke as a chef-slicer hybrid for precise push cuts and clean slicing; the Santoku for fast everyday chopping, dicing, and mincing; the Nakiri for straight-down, full-contact vegetable work; the Honesuki for breaking down poultry and trimming around bone; and the Petty for detail tasks, garnish, and in-hand peeling. Build a focused pair or a full working lineup from the same forge, and add to it over time without ever mixing steels, finishes, or handles.

Features

  • Unified build across the collection: stainless steel cutting core, suminagashi Damascus cladding, and a Santos rosewood wa-handle on every knife you add
  • Matched from one forge so blades share the same edge geometry, finish, and balance instead of being assembled from mismatched lines
  • Build-your-set format lets you pick only the blades you use and expand later with knives that match exactly
  • Covers the core kitchen roles: the versatile Gyuto and Santoku, Kiritsuke for precision slicing, Nakiri for vegetables, Honesuki for poultry and boning, and Petty for detail tasks
  • High-contrast suminagashi Damascus over a hardened stainless steel core delivers a sharp, durable edge with controlled flex and reliable wear resistance
  • Light, agile wa-handle balance suits long prep sessions and precise knife control

Build your Take Series set from the same forge: Gyuto, Kiritsuke, Santoku, Nakiri, Honesuki, and Petty, each sharing a stainless steel core, suminagashi Damascus, and a Santos rosewood wa-handle so every blade you choose matches the rest.

Warranty and Returns

Care & Maintenance

Hand wash, never the dishwasher. Wash the blade by hand with warm water and a little soap, then dry it straight away with a soft cloth. The dishwasher dulls the edge and damages the handle.

Cut on wood or plastic. Use a wooden or plastic board. Glass, stone, granite, and ceramic will chip a fine edge.

Hone often, sharpen rarely. A few passes on a honing rod every week or two keeps the edge true. When it finally needs sharpening, any standard whetstone suited to Japanese-style knives restores it.

Store it safely. Keep the knife on a magnetic strip, in a saya, or in a block, not loose in a drawer where the edge can knock against other tools.

Keep it dry. Never leave the knife to soak or sit wet in the sink. A drop of food-safe oil before long storage protects both the steel and the Damascus pattern.

Frequently Asked Questions

Who makes MATSUHIRA knives?

MATSUHIRA makes Japanese-style kitchen knives: chef knives, santoku, nakiri, kiritsuke and matched sets. Each blade has a hardened stainless steel cutting core and a Damascus-pattern finish, with a handle shaped for everyday use.

What is the Damascus pattern on the blade?

The blades carry a layered Damascus-pattern finish over a hardened stainless steel cutting core, so the pattern varies slightly from blade to blade. Pattern and finish may differ a little from the product photos.

How sharp is the edge out of the box?

Each knife arrives with a fine factory edge and is ready to use straight out of the box. No setup needed.

Will it stay sharp, or dull in a few weeks?

The hardened stainless steel core is designed to hold its edge through regular home use. A few passes on a honing rod between sharpenings keeps the edge aligned.

What happens when it eventually needs sharpening?

When the edge eventually needs work, any standard whetstone or pull-through sharpener suited to Japanese-style knives will restore it. Hone regularly, sharpen occasionally.

Which knife should I choose?

Start with the Chef knife (Gyuto) or the Santoku for everyday work, both handle almost everything. Add the Nakiri for vegetables and the Kiritsuke for clean, precise slicing. If you want the full kit, the matched set shares the same steel, finish and handle across every blade and is the easiest way to build a complete block over time.

How do I care for my knife?

Hand wash with warm water and dry it right after use, and store it on a magnetic strip or in a guard rather than loose in a drawer. Keep it out of the dishwasher, where heat and detergent dull the edge and damage the handle. Use it on wood or soft plastic, never glass, stone or ceramic.

How fast will my order arrive, and where does it ship from?

Shipping is free on every US order. Orders are processed within 1 to 4 business days and estimated delivery is 2 to 4 weeks from the date you order. Tracking is emailed as soon as your order is on its way. Full details are in our shipping policy.

What if it is not the right knife for me?

Cook with it and put it to work. If it is not for you, return it within 30 days for a full refund, with no restocking fee. We would rather you use the knife and be sure than keep one that does not fit your hand.

What does the warranty cover?

Knives are covered against manufacturing defects in the steel, the edge and the handle. It does not cover normal wear or damage from misuse, such as cutting bone or frozen food, prying, or running the knife through a dishwasher. If an item arrives faulty, contact us within 7 days of delivery and we will arrange a replacement.

Why is a knife like this priced the way it is?

We sell direct rather than through retail stores, and we keep the range focused on a small number of shapes. Prices reflect that.

Do they make a good gift?

Each knife arrives in protective packaging and is ready to give. Returns are accepted within 30 days of delivery under our refund policy.
